Born in Los Angeles and raised in Sicily, Chef Giovanni Mauro grew up between two worlds. The markets, ovens, and dinner tables of his childhood formed a deep respect for ingredients and the quiet rituals of Italian cooking.
As a teenager returning to California, he began his culinary career as a pizzaiolo at Dattilo’s in Whittier. The discipline of the oven, the pace of service, and the precision of dough work became the foundation of his craft.
He later honed his operational skills with Brinker International, learning the systems that allow a restaurant to serve consistently and with intention. That experience, paired with a return to Italy for deeper culinary study, sharpened both his technique and his philosophy.
Giovanni devoted his talents to his parents’ restaurant, Nora’s Italian Cuisine, bringing together family, heritage, and hospitality in Las Vegas. From there, he began to shape his own concepts—rooted in authentic Sicilian traditions, non-commercial Italian cooking, and a commitment to honest ingredients.
